Video editing Dolby 5.1 and multitrack field mixing

Okay,

I am editing the audio for a TV show in Dolby 5.1. using Final Cut Pro. So, when I'm mixing my separate audio tracks, say ambient sounds, dialogue, etc. do I do separate LFE tracks for each? Also, when I'm recording the sounds in the field, I'm currently using a Shure FP33 field mixer, with a tape out to a stereo 48 kHz 64-bit ZOOM H1 digital audio recorder in .wav file format. I usually use a boom, lav's on the talent, and mix stereo. I was thinking that if I got, say a Sounddevices multitrack field recorder, and mixed into that, I would get surround sound field recording. I could, say put LFE from one mic on the LFE track, EQ all the low end frequencies onto that track. Put talent mic on another track, boom on another, etc. Has any one mixed Dolby 5.1 in the field?
