I have a LTM Pepper 450. The bulb just went out, at our shop we only have 600W and 250W, what should I use?

Use the 600w. If it is too hot you can always knock it down with difusion or dim it.

What was the watage of the bulb you blew? Is 450 the maximum watage for the light? You don't want to stick some thing in there the unit can't handle!

I'd go with the 250. You're going to run a high risk of blowing the 600 out in a lamp that's meant to house a 450. I'm going to guess that you're shooting with a digital camera (DVCPro or SX) and you won't need a whole lot of juice for you're pictures.
A diffused 250 is going to look more flattering on your subjects than a 600 watt light.
Of course the correct answer is to order a new bulb that is the correct wattage for the given lamp.

Adam's right.
No camera made within the past 5 years should need a 600W lamp. It's just far too much light.
Remember, less is more with lighting. Quality over quantity, etc...
Now there are exceptions to this. I once had to light a side of the outside of Veterans' Staduim in Philly after the lights were out. A 600W in an Onmi focused to "spot" was easily able to do this...
